Marvelous in My Monday #2

I had a fabulous weekend which is making this Monday just MARVELOUS! Thanks to the adorable Katie for hosting this Marvelous blog party, head on over to Healthy Diva Eats and check it out!

Tyler had Friday off of school so he was waiting somewhat patiently for me when I got home from school. We went to dinner at Fremont's new Mexican restaurant, La Hacienda. I had this SMALL mango margarita which was delish, and the food wasn't too shabby either. We stopped at my parent's house so Tyler could catch up with my fam and then we headed to the bars with our good friends, Nate, Seth and Tyler.
Saturday was a day of cleaning and making food. Tyler made his meatballs and homemade BBQ sauce again while I made homemade sloppy joes for the Husker game. My parents, sister, and nephew came over with spinach dip, cheese and crackers, and apples and caramel. While Tyler's parents and brother brought chips and cheese dip. We had a smorgasbord of food and a full house of Husker fans to help cheer on a Nebraska victory over Michigan! (Tyler also grilled this chicken for me to eat for the week, what a guy!)
Sunday Tyler and I went to church with his parents and then had lunch at The Brass Wok. We followed that with some pure relaxation while watching the Chiefs lose again : ( He headed back to Columbus and I went to my parents to carve pumpkins. Here is my jack-o-lantern and my sister carved a Wisconsin "W" I mean Whitney ; )
My one year old nephew Brylen enjoyed playing in the bowl of seeds, but I didn't get any pictures cause my hands were all goopy! Once again, I didn't do so hot on the whole picture taking thing this weekend, I need to improve in that area! Hope you all had a wonderful weekend and a Marvelous Monday!

What I Ate Wednesday: "Bird Food"

Thanks to my attempt at cleaner eating habits, my boyfriend Tyler has decided that I'm "eating like a bird." I beg to differ and have tried explaining to him that I'm probably eating more than I did before, which is ok because my body needs GOOD fuel. He totally understands, but insists on giving me a hard time.

Here's a closer look at what I've been eating lately as my bird food...Thanks again to the lovely Jenn at Peas & Crayons for hosting this PINK event!
Breakfast- Pumpkin egg white oats mixed with cinnamon and topped with all natural maple syrup
Lunch- Boiled eggs, carrots, cukes, apple slices, and a turkey spinach sandwich on whole grain bread
Snack- A few handfuls of raw pumpkin seeds, raw sunflower seeds, soynuts, and raisins (Like my pink Keds look-a-likes and jeans?! Pink out day for Breast Cancer Awareness at school = jeans day! woo hoo!)
Snack- Peanut Butter & Chocolate Quest bar to hold me over while I line judged the volleyball triangular
Our Fall Sports Breast Cancer Awareness shirts for pink out day at school and the volleyball games
Late Supper- Sweet potato topped with coconut oil, chipotle seasoning, and cinnamon

Marvelous in My Monday #1

It's Monday! Isn't it MARVELOUS?! If you're day isn't marvelous yet, go make it marvelous by checking out the MIMM party going on over at Healthy Diva Eats, hosted by the lovely Katie!

This very first MIMM post of mine is going to be one of many words and few pictures as I apparently made no attempt to capture visual memories from the weekend, nice work, huh?

The weekend started out with a noon dismissal on Friday, woo hoo! Except we had staff development meetings all afternoon, wahhh wahhhhhhh. BUT I did find the information to be quite interesting so I didn't want to completely gouge my eyes out as I was counting down the minutes to the weekend.

As soon as the meetings were over, I was off to Columbus to spend the weekend with Tyler. We went with his roommate Tyler to a pretty swanky restaurant (for Columbus) called Dusters which also has Gottberg Brew Pub connected to it. I ate my weight in food (not good), but the food was good! First they brought out a cup of their soup of the day, beef and vegetable, then they brought out dinner rolls, followed by a side salad, and finally my seafood Alfredo with garlic bread on the side! Holy moly (definitely had leftovers)! I also had a glass of their brewed Octoberfest to wash it all down with, mmmmm!

Saturday consisted of a trip to the grocery store for some coffee, fajita supplies, and "tailgate" food. I bought this little nugget size carton of milk (Tyler claims he's lactose intolerant, so he's trying not to drink the stuff) to add to my Dunkin' Donuts Strawberry Shortcake coffee, if you haven't tried the stuff, you NEED to!
 
I threw together a fajita marinade with beef, onions, and red and green bell peppers for supper, while Tyler made meatballs with a homemade BBQ sauce concoction and a Mexican chip dip for the Nebraska game, GO BIG RED! (No pictures of the food, what was I thinking?!) Thank goodness we pulled off a win against Northwestern!
 
After the Husker game, some of the Scotus volleyball coaches came over for some brewskies and we of course watched more football. Apparently we forgot about our marinating fajitas, so after our guests left, we ate our fajita dinner at 11:00 at night then watched Back to the Future!
The Tylers had a 7:00am football meeting on Sunday and I slept in. We went to church at 10:00am then the boys had film and football practice at noon followed by a team dinner at 4:30pm. Needless to say I got a lot of school work done! Last night Tyler and I made a trip to Wally World where I FINALLY found this fabulous tea. It's seriously heaven in a cup. TRY IT!
My Monday morning started out marvelous by "sleeping in" until 6:45am (I'm usually up at 5:45am) and speaking to a class of Columbus Scotus seniors about my profession as a Speech-Language Pathologist. I think I put some of them to sleep, but they all perked up when they found out that I am dating Mr. Swanson ; )

Now that that's over with, it's time for high school parent teacher conferences in West Point; the elementary teachers have the day off-- jealous. Hoping this Starbucks gets me through the day!
According to the pictures I actually took this weekend, the only thing I seem to care about in life is little milk jugs, amazing tea, and coffee! Seems about accurate : ) Go on and be marvelous today!

High Five Friday #1

I've been reading High Five Friday posts hosted by the adorable Meg for quite a few Fridays, and now I'm finally posting my own, yay!

#1 My first high five is that I'm finally posting a High Five Friday post!

#2 I made Mahi Mahi for the first time this week. I've made fish before, I LOVE fish, but never Mahi Mahi. I cooked it with coconut oil and chipotle seasoning, paired it with brown rice and fresh steamed green beans, it was amazing!

#3 My friend Samantha, my roommate Michelle, and I channeled our inner creativity and painted pumpkins last night. We decided it was too early to carve them and these will definitely last til Halloween. What do you think of my little bedazzled pumpkins?

#4 I created a new iced coffee, despite the fact that it is freezing outside, what am I thinking?!

Vanilla Iced Coffee
1/4 c hot water
1 1/2 T instant coffee

1 1/2 c milk
2 T sugar free vanilla Torani

Combine the first 2, stir in the last 2, pour over ice in your favorite cup, and enjoy!

#5 High Five number 5-- This is my 4th blog post of this week which is a big deal considering I have been MIA in the blogging world lately!

Tuesday Truths

1) Truth is...I'm definitely not feeling creative today and I love the alliteration of this blog post title, so I stole the idea from the darling A Dash of Meg!

2) Truth is...I haven't blogged in FOR-EV-ER and I'm wanting/needing some changes in my blog, hopefully life will slow down and I can't make the changes I've been brewing up in my mind lately--stay tuned!

3) Truth is...the weather was B-E-A-U-TIFUL this weekend, (see previous blog post, and don't ask me why I keep spelling/sounding out my words like they do on a couple certain movies.)

4) Truth is...I have been eating kind of crappy lately, which doesn't make sense cause I was making great progress with all of my clean eats, and could tell the difference with my abs. Time to get back to the clean eats! Got fruit? I do!
5) Truth is...I went to Anytime Fitness for the first time in FOR-EV-ER (oops I did it again) last night and it felt absolutely amazing to lift again. I seriously have not had time to work out lately (either that or I was sick) BUT enough of that, no excuses, play like a champ! It's time to make time! (Anytime Fitness, thanks for the customer appreciation goodies!)
6) Truth is...I'm currently at parent teacher conferences, but this is night number two and I have yet to have one parent stop in my room.

Playing at the Pumpkin Patch

My parents, sister, 15 month old nephew, and I went to the Harvest Moon Pumpkin Patch near Oakland, NE on Sunday evening and we were pleasantly surprised at everything they had to offer! I would recommend it to anyone!
